Ingredients
2 cups raw cashews, soaked for 4 hours or overnight
1/4 cup nutritional yeast
1/4 cup lemon juice
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh chives, finely chopped
1 teaspoon dried thyme
Water, as needed for blending
Instructions
Drain and rinse the soaked cashews.
In a food processor, combine the soaked cashews, nutritional yeast, lemon juice, olive oil, garlic, salt, and pepper. Blend until smooth, adding water as needed to achieve a creamy consistency.
Add the parsley, chives, and thyme to the food processor and pulse a few times to incorporate the herbs without completely blending them in, maintaining some texture.
