Ingredients
2 cups of all-purpose flour
3/4 cup of granulated sugar
2 teaspoons of baking powder
1/2 teaspoon of salt
1/3 cup of vegetable oil
1 large egg, beaten
1/3 cup of milk
1 teaspoon of vanilla extract
1 cup of fresh blueberries (can substitute for frozen, but do not thaw)
Confectioners’ sugar for dusting (optional)
Instructions
Preheat the oven to 392°F. Prepare a muffin tin with paper liners.
In a large bowl, mix together the flour, sugar, baking powder, and salt.
In another bowl, combine the oil, beaten egg, milk, and vanilla extract.
Add the wet ingredients to the dry ones, mixing just until combined. Avoid overmixing.
Gently fold the blueberries into the batter.
Evenly distribute the batter among the muffin cups, filling each to about ¾ full.
Bake for 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Allow cooling in the tin for 5 minutes before transferring to a wire rack to cool completely.
Dust with confectioners’ sugar before serving, if desired.
